Western Chef’s Knife 8” — Redwood Burl & Copper
The 8” Western chef’s knife is a great size for home cooks and professionals alike. Gone are the days where 10 & 12” chef’s knives are the standard. Safety, control, ease of sharpening, and economy of space all inform the design of this modern classic.
Compared to the 7” Western chef, this knife has an inch longer blade as well as a 1/2” longer handle for balance.
The thin handle at the top allows for pinch grip techniques with the balance point being just forward of the handle, while the base of the handle is contoured for leverage if holding the handle farther down for slicing tasks.
The blade bevel is ground in a high rounded sabre, (nearly a flat grind). This gives the durability and cutting consistency of the sabre grind while rounding off the hard edges at the second bevel allowing for easier slicing.
