Prototype S-Ground Chef’s Knife— Ambrosia Maple & Copper
This prototype design has two features unique in comparison to the typical Redroot chef designs, namely the s-ground blade, and the k-tip point.
The s-grind consists of dual concave grinds that run along the blade, above the cutting edge. These hollows aid in the food “releasing” from the blade as you cut, rather than sticking to the flat surface of a blade.
The k-tip simply describes the downward angle of the tip of the blade, as contrasted by the typical Western style of blade tip. The k-tip makes the point of the blade a little more pointy for certain kinds of cutting, and reduces the curve of the belly, making the cutting edge flat for most of the length of the blade.
